Eat Kelp

Bring kelp from the ocean to your plate for a healthy vegetable alternative.


Kelp, also known as sea vegetable, is a highly nutritious seaweed that is completely edible, but most often used to flavor broths and soups. Before turning your nose up at the thought of eating seaweed, keep in mind that you likely have already. A common thickening substance in many processed foods is made from seaweed. If you are tired of land-grown vegetables, try kelp for a boost of iodine, chromium and carotene.


Instructions


1. Clean the kelp by wiping it on both sides with a damp cloth.


2. Lightly score the kelp with a knife.


3. Combine the kelp with 1 qt. water in a saucepan and bring to a boil.


4. Immediately remove the pot from the heat when it reaches and boil and take the kelp from the water with a slotted spoon. Use the kelp broth in any recipe calling for dashi broth.


5. Slice the cooked kelp and use it to top salads or to add to noodle bowls as a garnish and edible topping.
